Mom's Goulash

I don’t really know what my mom called this dish but it was always ones of the staples at our house. I make it today as a comfort food and way to reconnect with those happy times.

One of the great things is that it is super simple to make. Just put all of the ingredients in a pot and simmer until the potatoes are done to your liking.

  • 2 cut potatoes (I leave the skin on)
  • 1 can corn
  • 1 can green beans (this time I used one that was pre-seasoned with onions, garlic, and red pepper…it was good)
  • 1 package smoked sausage cut into slices (I’ve tried this with low-fat or turkey and it is ok but the flavor is better with just regular I find.)
